Could you please let me know the list of DHCP options supported by Dnsmasq?
Are there any known restrictions/limitations? Or all the options listed in
the below link are supported?

The command

dnsmasq --help dhcp

gives a list of the options dnsmasq knows about. Note that it's possible
to send any option, but specifying unknown options and some of the
stranger encodings requires some fiddling in the config file.
